Pumpkin and Orange Soup
This wild combo may seem unusual but this soup is sure to please your tastebuds...
Ingredients
Pumpkin(Red/Green): 1 cup(diced)
Carrots : 1cup(diced)
Tomatoes: 3tomatoes(chopped)
Pumpkin seeds: 1/2tsp
Orange juice: 1/2 cup(freshly squeezed)
Vegetable Stalk: 3 cups
Olive oil: 1tsp
Salt and pepper to taste
How to prepare
Heat a saucepan on a high flame, add olive oil and diced vegetables and tomatoes. Saute them all for 4-5 minutes.
Add vegetable stock, salt pepper(according to liking), add pumpkin seeds, and bring to a boil.
- Lower the flame and simmer for about 15- 20 minutes till the vegetables are tender. Cool them; blend the vegetable in a blender.
Then ‘sieve’ the puree in a pan.
Return to the flame, add orange juice on a low flame, and mix it well for few minutes.
Serve hot.
Garnish it with coriander leaves and grated paneer(cottage cheese)
The cream of pumpkin is perfect for cold winter days.
